On the "Good" Kind of Stress

My favorite part of today came in the form of a pie, in true Pushing Daisies fashion. To celebrate the end of 2 extremely stressful weeks, I decided to bake my first pie - lemon meringue (my favorite). The estimated total time, 5 hours, freaked me out so I got really flustered, and through poor planning had to prep the lemons, stir the pie filling, and bake the pie crust all at the same time, which put off the lunch Jezli made for me by 2+ hours. In addition to all of this, I really wanted to bake eggless cookies for Tina's brother's birthday before she came to visit me, which I was able to pull together although several of them came out burnt. Stressful? Yes. Ironic? Very. Happy? Extremely.

  2. but its a good kind of stress!!! :) and i must say very well done... honestly you cannot tell at all that this is your first and i really liked the combo of everything: the tangy lemon, sticky meringue and crumbly crust! i'm excited for future recipes and especially this cookie apple cobbler (but apparently you need a deep dish baking dish...not sure if i have that...) and thank you so so so much for the cookies on my and e's behalf! he loved the crispiness and they were not burnt at all! if anything they were just the perfect amount of brownness :)
